Aichi: More Than Just a Prefecture – It’s the Cradle of Samurai and Flavors
Home to Nagoya, Japan’s fourth largest city, Aichi is more than just a dot on the map—it’s a cultural powerhouse that once nurtured some of Japan’s most legendary samurai warriors: Oda Nobunaga, Toyotomi Hideyoshi, and Tokugawa Ieyasu. It’s also the birthplace of Nagoya Meshi, a proud and flavorful local cuisine rooted in robust seasoning and bold umami notes.



Known for its miso-based dishes, Aichi cuisine reflects the region’s centuries-old fermentation techniques. One highlight is Hatcho miso, a dark, rich soybean paste that intensifies in flavor as it simmers—unlike typical miso, which softens with heat. This unique miso was historically consumed by samurai for its high protein content and long shelf life, fueling them on the battlefield.

At the helm of this flavorful showcase was Chef Atsushi Yoshida, who presented a curated menu that paid homage to Aichi’s culinary roots while offering Thai diners a new perspective on authentic Japanese food in Bangkok.

- Miso Katsu Don – Aichi’s signature pork cutlet drizzled with a hearty miso sauce, served over rice.
- Kishimen Noodles – Flat udon-style noodles bathed in a comforting dashi broth.
- Mikawa Wagyu Steak – Premium sirloin grilled on hot stone, showcasing local Aichi beef.
- Miso Nikomi Udon – A thick, chewy udon noodle dish simmered in Hatcho miso broth—perfect for chilly evenings.
- Tenmusu – Tempura shrimp wrapped in rice and seaweed, blending crunch and softness in one bite.
- Hitsumabushi – Char-grilled eel over rice served in three styles: plain, with condiments, and with dashi broth poured on top like ochazuke.
