A Battle of Flavors: Northern vs. Southern Thai Cuisine, Reimagined by Two Master Chefs”

Two famous chefs. Two Thai regions. One unforgettable dinner.

From May 21 to 23, 2025, Khum Hom Restaurant at Movenpick BDMS Wellness Resort Bangkok is hosting a special dining event called “Singh Nuea Suea Tai”, or “Lion of the North, Tiger of the South.” It’s part of the Four Hands Culinary Experience—a rare chance to taste the flavors of both Northern and Southern Thailand in one meal.

Chef Ian Kittichai will be joined by guest chef Noi Bussarin from Magnolia Café in Chiang Mai. Together, they’ll create a special 6- or 8-course menu that blends two very different Thai cuisines.

Northern Thai food is known for its mild, balanced flavors—soft and comforting. Southern Thai food, on the other hand, is bold, spicy, and full of strong flavors. When combined, they offer a delicious contrast that shows just how diverse Thai food really is.

“Thai food isn’t just one thing,” says Chef Ian. “This event lets us show how different—and amazing—our regional food can be. We’re using real ingredients from the north and south, so guests get a truly authentic taste.”

Chef Noi adds, “Northern food is like a gentle whisper. Southern food speaks out loud with flavor. Together, they create something really special.”

Menu Highlights Include:

  • Southern-Style Steamed Curry with Wild Mushrooms and Tapi River Prawns – Chef Ian’s dish uses local mushrooms and curry paste, steamed in galangal leaves with sweet, bouncy freshwater prawns from Surat Thani.
  • Hung Lay Lamb Curry – Chef Noi’s take on a classic Northern dish with tender stewed lamb and rich, spiced curry, served with warm grilled sticky rice cakes.

For dessert:

  • Soft Coconut Egg Cake – A fresh twist on the famous sponge cake from Trang, using Samui coconut and toasted coconut flakes.
  • Thai Melon Ice Cream – Cool and refreshing, paired with sticky rice, crispy rice, and sugarcane syrup.
