A New Era of Spanish Gastronomy at Albricias, Chatrium Sathon Bangkok

Introducing Chef Roberto González Alonso — Bringing the Authentic Taste of Spain to Bangkok

A new culinary chapter unfolds at Albricias Restaurant, the signature Spanish dining destination at Chatrium Sathon Bangkok, as it proudly welcomes Chef Roberto González Alonso as its new Executive Chef. With more than 20 years of international experience across Michelin-starred restaurants in Spain, London, and Bangkok, Chef Roberto brings his passion for authentic Spanish cuisine, refined presentation, and heartfelt hospitality to the heart of Sathorn.

A Culinary Journey Rooted in Tradition and Technique

Born in Zamora, Spain, Chef Roberto’s remarkable career spans some of the world’s most respected kitchens — from DiverXO (3 Michelin Stars, Madrid) and Alkimia (1 Michelin Star, Barcelona) to leadership roles at Hotel Indigo Madrid, Centara Grand CentralWorld Bangkok, and DO&CO Catering.

Known for his expertise in both traditional and modern cooking methods — from vacuum-sealed techniques to classic tapas — Chef Roberto has earned accolades including Winner of the Zamora Tapas Contest (2010) and DEVORATAPAS Madrid Contest (2015). His culinary philosophy is simple yet profound: “Let the ingredients speak for themselves.”

Chef Roberto’s Vision for Albricias

At Albricias Restaurant, Chef Roberto aims to reintroduce diners to the soul of Spain — celebrating authenticity through a modern, approachable fine-dining lens.

Spanish cuisine is about authenticity, honesty, and generosity. At Albricias, I want to showcase the full picture of Spain, not just one region, through dishes that are effortless to understand, deeply flavorful, and created with professional skill. Guests should enjoy not only the food, but also the story and spirit of Spain with every bite.”

The New Menu: A Taste of Spain, Reimagined

To mark his debut, Chef Roberto González Alonso introduces nine signature creations that blend rustic Spanish heritage with contemporary finesse. Each dish celebrates regional authenticity and modern creativity:

  1. Slow-Cooked and Grilled Leek with Cecina and Cherry Coulis
  2. Pan-Seared Boletus Mushrooms with Truffle and Egg Yolk
  3. Grilled Octopus with Paprika Mousseline
  4. Tomato, Strawberry, and Smoked Sardine Salad
  5. Slow-Cooked Razor Clams with Lemon Air and Sofrito Sauce
  6. Pan-Seared Sea Bass Galician Style with Sautéed Baby Spinach and Cauliflower Purée
  7. Herb-Marinated Lamb Chops with Honey-Lemon Sautéed Potatoes
  8. Australian Wagyu Rib Eye (500g or 250g) with Piquillo Peppers
  9. Zarzuela Seafood Soup with Toasted Almonds, Lobster, Scallop, Tiger Prawn, and Clams

Each plate is a portrait of Spain — combining the rustic charm of its countryside with the sophistication of modern gastronomy.

More Than a Meal — A Spanish Experience in Bangkok

Under Chef Roberto’s leadership, Albricias continues to embody the warmth and generosity of Spanish culture. The atmosphere is refined yet relaxed, the service personable yet professional — a reflection of the Mediterranean spirit of sharing and togetherness.

Here, diners are invited to discover the story behind every dish, guided by a knowledgeable team eager to share the culinary heritage and inspiration that shape each creation. It’s not just fine dining in Bangkok — it’s Spanish soul on a plate.
