Le Normandie at the Mandarin Oriental, Bangkok, is welcoming its new chef, Michelin two-starred Alex Dilling from London. Chef Alex, known for his impeccable skills, introduces a fresh selection of lunch and dinner tasting menus that highlight his innovative approach to French cuisine.

Hailing from the two-Michelin-starred restaurant at Hotel Café Royal in London, Chef Alex Dilling brings his expertise to Bangkok with an array of meticulously crafted dishes. At Le Normandie, diners can enjoy 3, 4, or 7-course tasting menus for both lunch and dinner, along with a tempting selection of 12 à la carte options. Available now until January 31, 2025, this offering promises to be a must-try for food lovers.

Chef Alex earned his two Michelin stars at Hotel Café Royal just six months after it opened, an achievement that cemented his status in the fine dining world. This year, he’s in Thailand to debut his new menus, alongside his trusted sous chef George Kay. Reflecting on his passion, Chef Alex says:

“French cuisine has always been the pinnacle of culinary art for me, focusing on flawless ingredients and meticulous preparation. My love for cooking started in childhood and grew through travel and exposure to diverse culinary techniques. Chefs like Alain Ducasse and Hélène Darroze have been key influences, shaping my career with their wisdom and discipline.

I’m thrilled to bring this fusion of traditional techniques and modern innovation to Le Normandie, showcasing the essence of French cuisine while pushing its boundaries.”

Chef Alex’s menu is a masterful blend of classic French flavors and modern techniques. Highlights include Krystal Caviar with Japanese sweet shrimp, fresh cream, and ginger, as well as his signature Foie Gras Torchon paired with conference pear, long pepper, and brioche. Other standout dishes include Limousine veal sweetbread with sardines, citrus, and capers, and a contemporary twist on Bouillabaisse featuring Brittany cod and Sardinian pasta.

Main courses offer equally indulgent choices, like Kagoshima Wagyu beef with Krystal Caviar, French salsa, and crispy potatoes, and a Scottish Blue Lobster Ballotine served with vadouvan sauce and sand carrots. For dessert, the Guanaja 70% Chocolate combines rich, complex flavors with unexpected textures, featuring Pedro Ximénez wine and hidden brioche crumbs for a delightful crunch.
