On Wednesday 13 August, the first evening features a stunning 12-course beachfront dinner under the stars. Chef Wai reimagines southern Thai ingredients through the lens of northern flavors, presenting dishes such as Tapi River Prawn & Mangosteen Salad, Coconut Soup with Baby Octopus, Slow-Cooked Northern Beef Stew with Samui Herbs, and Silver Pomfret Grilled in Banana Leaf. The meal concludes with Chiang Mai Cacao Nib Tiramisu, infused with Thai brandy. This immersive beachfront dining Koh Samui experience is set against the backdrop of the Gulf of Thailand, with a dramatic fire show and live DJ enhancing the ambiance.
On Thursday 14 August, guests will move to FishHouse Restaurant & Bar, the resort’s acclaimed MICHELIN Guide Samui restaurant, for an 8-course dinner that celebrates the fusion of Isaan, Northern, and Southern Thai cuisine. Highlights include Isaan-Style Oyster Salad with Surat Thani oysters, Herb Fritters with Tamarind & Cashew Sauce, Northern-Style Sea Fish Larb, and a flavorful Thai Sweet Squid Paella. The evening ends with delicate Thai desserts like Sweet Dumplings in Coconut Sugar, accompanied by live saxophone music to elevate the atmosphere.
