Indulge in Innovative Japanese-French Fusion Cuisine at Den Kushi Flori, a Michelin-Recommended Culinary Gem
Den Kushi Flori, renowned from Tokyo to Thailand, has proudly earned its spot in the Michelin Guide Thailand 2024, showcasing a brand-new menu for the Winter season. “Kushi” refers to skewered dishes, and at Den Kushi Flori, it’s a culinary journey where the essence of French and Japanese flavors come together in an innovative style, using 100% imported Japanese ingredients, carefully chosen for both premium quality and organic authenticity.
This culinary collaboration is a result of the expertise of two longtime friends and chefs, Zaiyu Hasegawa, owner of the acclaimed “Den” in Tokyo (ranked Asia’s Best Restaurant 2022), and Hiroyasu Kawate, owner of the modern French restaurant “Florilège” in Tokyo (ranked 3rd in Asia’s Best Restaurant 2022). In 2023, they joined forces to open Den Kushi Flori in Tokyo, and later in Bangkok, bringing a unique dining experience to Thailand.
Chef Susumu Shimizu, who earned a Michelin star for the Tokyo branch, has crafted a menu that seamlessly combines his experiences from prestigious restaurants in both Japan and France. The dishes, presented in an innovative course format, resemble the elegance of kaiseki cuisine but with a fresh and intriguing twist.
The Winter Season menu features exquisite dishes, such as:
- Terrine de Légumes with Ikura, Dashi, and Wasabi
- Shrimp Ball (Ebi Shinjo) with Tom kha Gai Soup
- Duck Meat Ball and Duck Breast Kushi with Bok Choy and Foie gras Sauce
- Clay pot Rice with Mix Vegetable and Beef tongue
- Soy Milk Pudding and Charred Scallop with Daikon Sauce topped with Truffle
- Steamed Abalone with Apple vinegar Cream Sauce, Pumpkin, and Potato Tempura
- Choice of Caramel Pudding or Daifuku Mochi for dessert
Located in the convenient EmQuartier building, Den Kushi Flori in Bangkok offers a unique dining experience where customers can witness the chefs’ culinary artistry up close. Open every day for lunch and dinner (except Tuesdays), the lunch menu consists of 5 courses priced at 2,800++ Baht (12:00 – 15:00, last booking at 13:00), while the dinner menu offers 7 courses at 3,500++ Baht (18:00 – 21:30, last booking at 19:30).
