Chef Oscar shares that the choice of lobster matters significantly, using two main types: Andaman Lobster or the Dragon Shrimp from Phuket, known for its large size without claws, and lobsters with large claws from the East Coast of the Americas, such as Boston Lobster, Canadian Lobster, and European Lobsters like Brittany and Atlantic Lobsters.
“As we enter the Lobster Season, particularly with cool and rain-free weather, the water is crystal clear, resulting in the highest quality and freshest seafood. This ensures the lobster meat is at its prime, delivering the best texture and flavor. Understanding the quality of the meat is crucial in creating an exceptionally delicious dish,” Chef Oscar explains.
